It’s full-on buttery melt-in-your-mouth with an earthy umami component. Not cheap, although the wedge I tried was bought at only around 10 USD/kg thanks to “best before” date stupidity.

I went to a cheese store in Albany this past weekend called The Cheese Traveler, I was caught in one of those moments where I wanted to ask for a taste of everything but felt like an ass for asking for more than 5.

The same thing happened with beer; there used to be a time when people associated U.S. beer with the likes of Budweiser and not much else.

It will take a pretty long time to get international traction, though; especially with EU tariffs. Though maybe the UK will start buying U.S. cheese after Brexit…
